We start with firm, fresh brinjals sourced locally from trusted farms around Rajahmundry. These are sliced and sautéed until they soften and soak in the warmth of home-roasted mustard seeds, red chillies, fenugreek, garlic, and a punch of tamarind for a mild tang. All of it is brought together in cold-pressed groundnut oil, the same way our ammammas did before refrigerators and mixers were around.
This pickle is bold, spicy, and beautifully balanced, with the smoky texture of cooked brinjals melting into the rich masala. Every bite is like sitting in your childhood kitchen again waiting for lunch while Ammamma pours this onto hot rice with ghee and a papad on the side.
