At Ammamma’s Pickles, we don’t mask the bitterness we balance it. We use fresh, tender bitter gourds, sliced thin and sun-dried just enough to mellow their sharpness while retaining their crunch. These slices are then fried gently to get that light crispiness and mixed into a fiery blend of hand-roasted mustard seeds, garlic, red chilli powder, turmeric, and our signature cold-pressed groundnut oil.
