Magai Pickle is one of those timeless Andhra classics that has quietly held a permanent place in our kitchen shelves and our memories. At Ammamma’s Pickles, we recreate this age-old favorite just the way our grandmothers did, with sun-dried mangoes, hand-pounded spices, and lots of love.
We start with magai, raw mango slices that are dried under the East Godavari sun until they get that chewy, leathery texture. These aren’t just any mangoes they’re handpicked at peak season, carefully sliced and dried over days under clean, hygienic conditions. Once they reach the perfect dryness, we marinate them in a traditional blend of roasted mustard powder, fenugreek, garlic, red chilli powder, turmeric, and cold-pressed groundnut oil.
What makes this pickle special is that deep, slightly smoky mango flavor paired with the earthy kick of roasted spices. It’s bold, tangy, and slightly bitter in the best way possible just like how Ammamma used to make it during the summer break.
